Baked French Toast

We love breakfast.  We really love having this for breakfast.  Sometimes we have it for supper (Thursday night is breakfast night.)  It is such a treat.


Baked French Toast.  So yummy, it melts it your mouth. 
Start with the caramel.  Melt brown sugar, butter, and cinnamon in a saucepan, then pour it into a 13x9 pan.  No need to spray the pan...the butter takes care of that.  You can add chopped pecans...we prefer it pure & simple.



 Cut 1-inch thick slices of French bread.  I cut it on the angle so there is more surface area for all the caramel goodness. 
 
 
Beat a few eggs with milk, dunk the bread into the egg on both sides, then place on top of the caramel in the pan.
 
 
Bake it until the top is dry and golden. 
 
 
 Flip the French toast when you serve it so the caramel is on top.  You can dust it with powdered sugar if you wish...we prefer it pure & simple.  A few strawberries or raspberries on the side would be supreme!

Baked French Toast
 
In a saucepan, melt:
 
1/3 c brown sugar
1/4 c butter
1/2 tsp cinnamon
 
(Double the brown sugar, butter, and cinnamon if you like lots of caramel). 
Pour caramel sauce into a 13x9 pan.  May top with chopped pecans or coconut.
Beat together:
 
3-4 eggs
1/3 c milk
 
Slice a French bread loaf into 1-inch slices.
 
Dip both sides of each bread slice into the egg mixture.  Place on top of the caramel sauce in the pan.  Bake at 350 degrees for 25-30 minutes or until the top is dry and golden.  Remove one slice of French toast at a time, inverting onto a serving plate or individual plates.  Dust with powdered sugar if desired.

Cheese Whips

Cheese curds...a Wisconsin delight. 

"What?"  you say???  "What are you talking about?" 

'Cheese curds are young cheddar Wisconsin cheese in its natural, random shape. Curds have a mild flavor and smooth texture and when fresh will literally squeak as you chew them.' (wisconline.com)
In other words, it's fresh cheese that hasn't been pressed into a block or aged. They're the babies of the cheese world.  They come in yellow and white. 




They're so fresh they squeak when you eat them.  Really.  They weren't just saying that in the quote.

Mmmmm.....

We buy them at Weber's Farm Store.  Love the drive-up window for getting milk, eggs, CHEESE, and amazing soft-serve ice cream cones.




We made homemade deep-fried cheese curds one day.  (not my photo, but I needed one quick)

Then we decided to if deep-fried cheese curds were good, what about deep-fried cheese whips

Oh, my, dear heaven. 

Cheese whips are like string cheese, but they're long and skinny and super fun to eat.



We dunked them in flour, put them in an egg & milk bath, then shook them in seasoned bread crumbs. Do this step twice for a nicer coating.   IMPORTANT NOTE:  Put them in the freezer for a few hours.  The cheese needs to be really cold, or it will ooze and melt in the hot oil before the breading browns.

Cook them in hot oil for about a minute.  Watch closely...they brown fast & melt fast.  Scoop them out with a large slotted spoon or one of those scoopy-basket-with-a-handle tools.  Eat as they are or with marinara sauce.  Pizza sauce & spaghetti sauce work well, too.

My Nephew's "Redneck Flume"

These photos are from April...yet priceless.
We went to Grandma and Grandpa's house in Minnesota for Easter.  Oh yes.  It was Easter.  And boy, was there snow!  The girls couldn't wait to go sliding.  They LOVE the sliding hill. 

 
They go flying down the hill and onto the pond. At Christmas, they even went up the hill on the other side and into the trees. Well, not very far into the trees. We set records this year!


So now it's Easter and there is still PLENTY enough snow to slide.  This is Good Friday.

Fast forward to Saturday.  My nephews arrived and back we went to the hill.  Only guess what!  There is no longer just snow covering the pond.  It was warm on Friday (like in the 40s) and now there is slush.  Does that stop them?  Are you kidding?!



Oh, my dear heavens. 
But this was not the end of it.  They went over and over again.  Sometimes they had to look for the toboggan under the slush.

You would not catch me in there!  I like warm!
The girls went in to the tub back in the house (Grandma's tub is so much fun!).  Everyone had hot chocolate & marshmallows.  Life was so much more than good.

Do you think that's the end of it?  Of course not!  When these four get together, you never know what will happen.  The nephew without a shirt (why were a shirt when it's going to get wet anyway??) decided he wanted a video to upload to AFV--hoping to win $100,000 of course.  After Easter dinner on Sunday, it was back out to the "Redneck Flume". 



Notice how Ebony stays on the side?  Actually, I snapped the photos before she jumped in with them.  Who needs to pay for entertainment when you have something like this to watch? 

Oh, the joy of laughs and giggles and having fun with cousins. 

Treasured memories.

Can You Whistle?

I don't have a picture of my little girl today--I left without my camera.  This little girls sure is a sweetie, isn't she?  I hope she doesn't mind being famous today.

We took our dog down to the School Forest early, early this morning.  First my little sweetie made a whistle from grass.  Then she stopped and grabbed an acorn.  "Listen, Mommy."  Wow!  She about blew out my ears.  Talk about shrill!  Who would have thought?  She thought it would be a good wake-up alarm when we got back to the house.
